Shredded Beef Tacos
Ingredients
- 2 cups cooked shredded beef, such as leftover Classic Pot Roast
- ½ cup reserved pot roast cooking liquid or beef broth
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp salt, or to taste
- 8 small flour or corn tortillas
- 1 lime, cut into wedges
For serving, optional:
- Shredded cheese
- Diced onion
- Chopped cilantro
- Salsa
- Sour cream
- Avocado
Instructions
- Season the beef: Add the shredded beef and ½ cup cooking liquid or beef broth to a large skillet over medium heat.
- Add the taco seasoning: Stir in chili powder, cumin, garlic powder, smoked paprika and salt.
- Heat: Cook for 5–8 minutes, stirring occasionally, until the beef is hot and has absorbed most of the liquid. If it starts to dry out, add another splash of broth or cooking liquid.
- Warm the tortillas: Warm the tortillas in a dry skillet, microwave or directly over a gas burner until soft and pliable.
- Assemble: Divide the shredded beef among the tortillas and add your favorite toppings.
- Serve: Squeeze fresh lime over the tacos and serve immediately.
