Bone Broth Gravy

Ingredients

  • 2 tablespoons butter, ghee, or fat from drippings
  • 3 tablespoons arrowroot powder or flour
  • 1 cup chicken drippings, fat removed, stock, or bone broth
  • Freshly ground black pepper
  • Salt to taste

Instructions

  1. In a saucepan, melt butter (or preferred cooking fat) over medium heat, add arrowroot powder and cook for 1 min.
  2. Very slowly add broth a little at a time while whisking constantly. Don’t add all at once or it will be difficult to whisk out the lumps of arrowroot. Keep whisking until completely smooth.
  3. Simmer over medium-low heat for 2-3 min. to thicken.
  4. If the gravy is too thick for your liking, add additional broth 1 tablespoon at a time to thin.
  5. Season with salt and pepper to taste.

Recipe Notes

This recipe makes one cup of gravy, so you may want to double or triple this if you're serving a crowd.
