Chicken Caesar Meatball Subs

Ingredients

  • 1lb ground chicken
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 cup parmesan, plus more for topping
  • 1 teaspoon Italian seasoning
  • 1 head romaine lettuce
  • 4 bread rolls
  • 1 tablespoon Caesar dressing and extra for topping
  • 1 tablespoon cooking oil
In a bowl, mix together the ground chicken, egg, breadcrumbs, cheese, 1tbsp of Caesar dressing and Italian seasoning.
Shape into approx. 20 meatballs. Heat oil in a pan, once hot add meatballs and fry for about 10 minutes, rolling them around to brown evenly.
Toast buns if desired, then add meatballs to buns. Top with romaine, cheese and drizzle Caesar dressing on top.
