Lamb Gyro

Ingredients
Gyro Meat
2lb Ground Lamb
1 medium onion, chopped
2 cloves garlic, minced
1tbsp ground marjoram
1tbsp ground rosemary
2tsp salt
1/2tsp pepper
8 flatbread/pitas
diced red onion
shredded romaine lettuce
diced tomatoes
tzatziki sauce (store bought or homemade!)
Preheat oven to 325° and lightly grease a 9X13 baking dish
Mix gyro meat ingredients thoroughly in a mixing bowl.
Add meat mixture to the 9X13 pan, spreading and pressing down until even
Bake 40-45 minutes or until internal temp reaches 160
Remove from oven and let rest at least 1 hour. If desired, cover and put in fridge overnight to set up.
Transfer meat to a cutting board and slice into thin slices. Quickly sear slices in a flat grill or cast iron pan...don't over cook!
Add a few slices of meat to center of pita. Top with desired toppings and tzatziki sauce.
