Garlic Roasted Leg Quarters


 



Ingredients


  • 4 chicken leg quarters
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1&1/2tsp dried oregano
  • 1tsp salt
  • 1/2tsp black pepper
  • 2tbsp chopped fresh parsley
  • 1/2 lemon, cut into wedges

Preheat oven to 400°F.

In a small bowl whisk the olive oil, garlic, oregano, salt and pepper.

Pat the chicken dry and place on a baking sheet, skin side up.

Rub the chicken with evenly with the garlic mixture, coating both sides well.

Arrange lemon wedges around chicken and bake for 40-45 minutes, or until the internal temperature reaches 165°F and the skin is golden brown. You can baste the chicken a few times as it cooks.

Cover and let rest for 10 minutes, serve with seasonal roasted veggies or a green salad.
