Pork Tacos

  • 3 lb pork roast
  • 5 cans diced green chilis (spicy level depending on taste)
  • 1/4 tsp each; garlic powder, onion powder, crushed red pepper flakes and oregano
  • 1/2 tsp each; paprika and cumin
  • 1 tsp each; salt, pepper and chili powder
  • 3 tsp cumin - set aside
  • tortillas, lettuce and jack cheese


  1. mix all dry spices except 3 tsp of cumin

  2. cut roast in have and rub spice mixture liberally over both halves. place in slow cooker with green chilis and cook on low for 8 hours. (can also use instapot for 120 minutes)

  3. once pork is tender, remove from slow cooker and shred. add pork and 3tsp cumin back to slow cooker and stir.

  4. serve on warm tortillas topped with letuce and jack cheese
