Sausage and Sweet Potato Hash

Ingredients

  • 1 lb Ground Pork, plain or country
  • 3 TBSP rendered pork lard or coconut oil
  • 2 small sweet potatoes, cut into 1/2 inch pieces
  • 1 medium onion, chopped
  • 1 small red pepper, chopped
  • green onions for garnish

Instructions

  1. If using county seasoned pork, mix spice pack into ground pork in a separate bowl.

  2. Heat a cast iron skillet over medium heat and add about 1tbsp of the lard. Once the lard is melted add the chopped onions to the skillet. Saute until translucent, about 3-5 minutes.

  3. Crumble the ground pork into the skillet and cook until browned, stirring often. Add the peppers when the pork is about almost done and continue to cook.

  4. While the pork is cooking, heat the remaining 2 tbsp lard in a separate skillet over medium heat. Once its melted and sizzling, add the sweet potatoes and stir to coat in the lard. Stir them occasionally until they begin to brown, then cover the skillet, turn the heat to low and let the potatoes cook for another 10 minutes or until soft.

    Check the potatoes and heat to ensure they're not burning and turn if needed!

  5. Once the potatoes are soft, combine with the pork. Top with the green onions and serve!
