Slow-Roasted Garlic & Brown Sugar Brisket


Ingredients

  • 3–4 lb Oak & Barrel Meats beef brisket

  • 2 tbsp olive oil

  • 2 tbsp brown sugar

  • 1 tbsp salt

  • 1½ tsp black pepper

  • 1 tbsp smoked paprika

  • 2 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • 1 cup beef broth

  • ½ cup apple cider vinegar (or red wine)

  • 1 large onion, sliced

  • 4 cloves garlic, smashed


Instructions

  1. Preheat oven to 300°F.

  2. Mix rub: Combine brown sugar, salt, pepper, paprika, garlic powder, onion powder, and thyme.

  3. Prepare brisket: Pat the brisket dry and rub it generously with olive oil, then coat with the spice mix.

  4. Sear (optional but adds flavor): In a large oven-safe pan or Dutch oven, sear the brisket over medium-high heat for 3–4 minutes per side until browned.

  5. Add flavor base: Scatter sliced onions and garlic around the brisket, then pour in broth and apple cider vinegar.

  6. Cover tightly with foil or a lid and roast for 4–5 hours, until the brisket is fork-tender.

  7. Rest: Remove from the oven and let rest 15 minutes before slicing against the grain.


Serving Ideas

  • Serve with mashed potatoes or roasted vegetables, spooning pan juices over the top.

  • Shred leftovers for BBQ sandwiches, tacos, or brisket chili.
